Since tomatoes are a major part of our dishes in Africa, scarcity of the vegetable especially during the rainy season, becomes a problem.
However, i came across a post online which suggested that carrots can be used to replace tomatoes and i decided to try it. To my greatest surprise, it was very delicious. Infact, even better than the tomato stew.
So i have decided to share with you the process of making this delicious stew which is also very affordable. Just follow the steps below:
*Boil your meat and fry as well if you wish.
*Wash about 7-10 pieces of medium sized carrots, cut into pieces and put in a blender.
*Add some ginger to it and a reasonable amount of water to enable it blend well.
* Allow it to blend thoroughly.
*After blending, pour the content into a seive and squeze out the juice from the shafts.
*You can drink the juice as it has so many health benefits.
*put the shaft in a bowl and cover.
*Wash and blend you pepper with some onions and garlic if you wish.
*Pour oil inside a pot place on fire.
*Cut some onions inside it and allow it to fry for about 2 minutes.
*Pour your blended pepper inside the hot oil.
*Add your spices(curry, thyme, maggie cubes, etc).
*You can also add blended dried crayfish.
*Allow it to cook for about 15 minutes then add the meat stock.
*Allow it to cook for another 15-20 minutes then add the shafts from the carrots.
*Stir and let it cook for 10 minutes.
That is all and your carrot stew is ready.
